I am planning on smoking a turkey this Thanksgiving. Have read the thread on low and slow BBQ and it offered no advice for turkey smoking. Last year msu79gt82 was planning on smoking a whole bird for Thanksgiving according to that thread. Did you do it? How did it come out?
Anyway, I have smoked a lot of different things before (ribs, shoulders, fish, chickens, etc), but never a whole turkey. I have read anything from 30 minutes to 1 hour per pound. This is quite a difference. For a 15 pound turkey ( what the wife bought today) these times can vary from 7 1/2 hours to 15 hours. Has anyone here ever smoked a whole turkey before? If so how long did you leave it on and did you do anything special?
I plan on using apple wood for my smoke flavor. I have a wheelbarrow full my cousin brought me from his own orchard in Oregon.

| It takes 1.25 to 1.5 hours per pound at ~210 degrees. That was too long for me so I put the bird in the oven for 2 hours and on the smoker for 4 hours. Saved some time that way, but a hassle. From now on I plan on smoking smaller birds - big birds can stay in the oven. |
