I am smoking a turkey tomorrow. Starting at 6:00 a.m. PST. 13.5 lb. bird. Question, how long can I soak the wood chunks ? Obvisously, I don't want to start soaking them at 4:00 a.m. !!! Can I soak them over night, or is that too much !
Please let me know ! :confused:

I have not done any meat smoking in some time. Most of my old recipes show an hour minimum. I never heard of soaking overnight causing a problem.
