My wife and I were standing in the kitchen staring into the cupboard trying to think of something interesting to make and eat. Knowing full well that this site is a diverse and cultured group, I was wondering if members would cut and paste their favorite recipes into this thread in the hopes that others can enjoy that "secret" recipe that you crave once and awhile.

Spinach Dip

1 (10-ounce) package frozen chopped spinach, thawed
1 packet of Knorr brand vegetable soup mix
1 teaspoon dry onion soup mix (mix well before measuring)
2 cups sour cream
1/2 cup mayonnaise
3 green onions, chopped
Squeeze spinach to remove excess liquid. Combine all ingredients, mixing well. Chill dip at least two hours.
Makes about 4 1/2 cups dip.

Serving Suggestion: Hollow out a round loaf of bread and fill with the dip. Cut the middle section of the bread into desired shape and place around the dip along with an assortment of fresh vegetables.

Oatmeal Raisin Classics Cookies

3/4 cup shortening
1 cup firmly packed brown sugar
1/2 cup sugar
1/4 cup milk
1 egg
1 teaspoon vanilla
1 cup all purpose flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
3 cups rolled oats
1 cup chopped walnuts
1 cup Sun-Maid Raisins

Heat oven to 350 degrees F. Grease cookie sheets. Combine shortening, brown sugar, sugar, milk, egg and vanilla; beat until light and fluffy. Combine flour, cinnamon, baking soda and salt. Add to shortening mixture; mix well. Stir in oats, walnuts and raisins. Drop by teaspoonfuls onto greased cookie sheets. Bake in upper third of oven at 350 degrees F. for 12 to 15 minutes. Makes 3 dozen cookies.

We skip the walnuts, some kids have nut allergies.

Well, I cook a lot of Indian dishes. Not sure if many of you have tasted it. But if you are interested, I'll be glad to write out a few of 'em.

I admit I have not tried cooking this recipe on my own but found it on the website of our favorite restaurant about a year ago. The restaurant is called "The Clubhouse". I order this dish almost every time we go. Check out the website and see if there is one in your area and I highly recommend trying it if there is one near. www.theclubhouse.com

ORANGE BASIL SALMON

Ingredients:

-4 tsp. olive oil
-2 tsp. Basil(sliced 1/8")
-1/2 c. orange buerre blanc(see below)
-pinch salt and pepper
-2 tsp. orange zest
-4 parsley sprig(garnish)
-4 tbsp. orange glaze(see below)
-4 ca. Salmon Filet
-4 orange twist(garnish)

=Rub each salmon filet evenly with 1 tsp. olive oil then season with salt and pepper.
=Place salmon evenly on a metal baking sheet. Place into oven at 350 deg F, uncovered for 6-7 minutes.
=Pull salmon out of oven and baste each with 1 tsp. of orange glaze. return to oven and continue to bake for 2-3 minutes or to desired doneness.
=Transfer salmon to serving plate and top each filet with 1 fl. oz. orange buerre blanc, 1/2 tsp. sliced basil and 1/2 tsp. orange zest.
=Garnish with orange twist, parsley and serve with your favorite accompaniment.

ORANGE GLAZE
-------------------
Ingredients:

-1 c. orange juice(fresh)
-1/4 c. sugar, granulated

=Combine juice and sugar in a heavy bottom sauce pan and bring to a boil.
=Turn heat down to medium high and continue to cook until juice has reduced by half and a nice glaze has formed.
=Transfer to a storage container and keep refrigerated until needed.

ORANGE BUERRE BLANC
------------------------------
Ingredients:

-1c. white wine
-2 tsp. shallots, minced
-1/2 c. orange glaze
-1/4 c lemon juice
-salt and pepper to taste
-1 c. whipping cream(heavy)

= Combine white wine, shallots and lemon juice in a heavy bottom pan and bring to a boil. Reduce until almost dry.
=Add heavy whipping cream and return to a boil. Turn down to medium high and continue to boil being careful not to burn. Reduce by half or until cream is thick and bubbly.
=Remove reduction from heat and while stirring slowly add butter. Continue to whip until all the butter has been incorporated.
=Add 1/2 cup orange glaze and blend until smooth in texture.
=Season with salt and pepper then pour into your favorite serving container until needed.
