Will put a turkey on the charcoal grill for about 8 hours Saturday. It will slowly turn and baste in its own juices and absorb the smoke from the mesquite hunks that have been soaked for 12 hours. Will do nothing to it except keep a few fresh charcoal briquetts and wood chunks. The biggest problem is cooking it slow enough.

Later in the day the prime rib will start slowly turning on the gas grill.

My wife's sister already dropped off a 17 lb rib (big family on the in-law side). Not sure what kind since I haven't looked at it closely other than it's huge and taking up some space in the fridge. Then her sister said "320F" and "20 minutes per pound". Man... that turns out to be 5.5+ hours and it'll be so well done that we might as well just let everyone chew on leather belts if they like hard stuff. Not only that, it'll be smoking indoors if we try to cook it that long!!

{I suspect that formula only works for smaller pieces, and we've never had to deal with anything this large before.}

Yeah, 10oz Maine lobster tails and 6 oz Filet Mignons along with a few Avo Signature Cigars...
