God this place is DEAD ! Must indicate weather still sucks mid and back East...Anyway here is some of my smoked brined chicken from "last" weekend, had left overs and just completed a "Louisiana Smoked Brinded Chicken Gumbo" for dinner tonight.....It must be hitting 80 right now at 3:30 p.m. Friday! What are you smoking ??????:1: :1: :1:

In three weeks I will be cooking 50 chickens for our monthly Yacht Club gathering. Do this in April of every year. Use a recipe from an old Cajun friend of house. The prime activity is to butter the chicken every 5 to 7 minutes for an hour over relatively hot charcoal fire. You use an unbelievable amount of salt in this butter.

I have to go rent a large mobile charcoal grill for this cookout. Even then it takes at least two cooking's to get all of the chicken finished in time.

Today I went to my favorite Asian market and got two of the huge LIVE LOBSTERS. Here is a shot of one. We will have a cajun boil this afternoon for dinner along with other goodies.....:1:

BEST product on the planet for boiling any kind of shell fish (crab, crawfish, shrimp, Lobster etc....) THE BEST don't waste you money on other stuff....
Add to the water:
1 full bottle of salt (yes the entire container of salt)
1 full bottle of red cayenne pepper (don't substitute either)
1 ENTIRE small bottle of Tabasco (don't substitute either)
2 beers (any kind is fine)
2 large lemons, cut squeeze and drop in pot, yes drop in the peelings etc...
2 large Oranges, cut, squeeze juice and drop peeling in pot
Add:
whole medium onions, red potatoes and FRESH CORN ON THE COB !

May sha, may you got da best food on da planet ! Gauranteed !

To eat:
Place newspaper on outside table and enjoy with your favorite beverage (Cold Dixie beer is best):1: :1: :1: :1: :1:
