with the nav system, is it possible to to store a specific route between two points? (as in, this is the way I prefer to drive to work, it's neither the easiest or shortest)

Can you not set it up with specific, operator input way points? That is what I do with my Garmin portable when I have a specific was I want to travel.

On the 07 you can add waypoints, but I don't think you can specify a predetermined course like the OP wanted, but adding waypoints may be a cumbersome method of achieving that.
