2 chicken breast or dark meat. Chop in pieces, sprinkle salt, Cayenne pepper, black pepper and garlic powder all over chicken peices.....set aside

chop bacon strips in 1 inch pieces (smoked apple wood is best) then brown in pan, remove bacon and set aside

Place chicken piece in bacon grease and brown of all sides then place in dutch oven (see picture)

brown in that good bacon/chicken grease, chopped onions, bell pepper and carrots, saute for a few minutes. Add onion powder, L&P, Tabasco and Tony's...Add 1 cup of red wine, let simmer for 2 minutes then add a rich chicken stock (1.5 cups) stir well then add fresh Thyme (just a few leaves), stir well then pour over chicken in dutch oven. Add frozen pearl onions (one cup) and 1 inch pieces of fresh carrots and celery, then simmer for 25 minutes or so. Serve over steamed white rice with good sour dough french bread......:1: Mine in the makings...

You can add flour or Tony's "Roux Mix" to thicken the gravy.....oh yeah babe......
